Sample & Hold means lockiing onto a specific voltage at the input, every time a trigger or gate signal (the clock or anything that rises from 0 to positive voltages) goes from low to high. Track & Hold is similar, but betwen periods of freezing at a voltage, there are also intervals of unfrozen voltage — on this device, the voltage is frozen as the pulse goes from high to low and unfrozen in between.
On this device, you have both at once. The track output is at the top of the lefhand column and the sample output is at the top of the righthand column. Shift registers pass voltages to successive outputs with each trigger/gate pulse, and this device has those too. Both the track and sample outputs are shifted downward with each new clock pulse, traveling across 16 jacks in total. You can treat these like clocked delays for pitch or modulation values. For instance, you can do musical rounds with oscillators connected to successive jacks. Similarly, modulation values can cascade like a wave across modulation destinations. A lot of power and flexibility are gained by linking these units together, and you’ll be hard-pressed to find a shift register that goes to 16!
